The Kashmiri chili is a wrinkled, deep-crimson pepper from the cool, alluvial valleys of the Kashmir region, bred over generations for an extraordinary vibrancy of color rather than heat. When dried and ground into powder, it imparts a brilliant scarlet hue to dishes like Rogan Josh and Tandoori Chicken along with a mild, slightly fruity warmth and gentle smokiness. It is one of the most important coloring and flavoring spices in Mughal-influenced North Indian cuisine.
