Shishito is a slender, thin-skinned Japanese pepper (Capsicum annuum) with a mild, slightly smoky and citrusy flavor; its name translates roughly to "lion's head," referencing the bumpy tip of the pod. The peppers are predominantly mild, though roughly one in ten pods carries a surprising burst of heat. They are most popular blistered whole in a hot pan or on a grill, finished with salt, and served as an appetizer — a preparation that spread widely in North American restaurant culture.
