The Cubanelle, also called the Italian frying pepper, is a long, tapered sweet pepper that ripens from pale yellow-green to red and is prized for its thin walls, mild sweetness, and excellent cooking qualities. Its flavor is subtly fruity and grassy when raw, concentrating into a rich, silky sweetness when sautéed in olive oil. It is a staple in both Caribbean and Italian-American cooking, used in sofrito, pepper-and-egg sandwiches, and as a stuffing pepper.
