Yellow bell peppers are a fully ripened form of sweet bell pepper that develop their golden-yellow color as chlorophyll breaks down — most yellow bell varieties are harvested after an additional 2–3 weeks beyond the green stage. Their flavor is noticeably sweeter and less bitter than green bells, with a crisp, thick-walled flesh and zero heat. They are among the richest vegetable sources of vitamin C and are widely used raw in salads, roasted for antipasti, and stuffed as a main course.
