The Hungarian Wax pepper is a pale yellow, waxy-skinned chili that ripens through orange to red and is harvested at various stages for different flavor and heat profiles. When picked yellow it is milder and slightly sweet; left to redden it becomes noticeably hotter. A long-standing staple of Central European kitchens, it is especially popular for pickling and stuffing, and performs well in cool-summer gardens where many hot peppers struggle.
