The Aleppo pepper is named after the ancient Syrian city of Halab and has been a cornerstone of Middle Eastern and eastern Mediterranean cooking for centuries. The pepper is typically dried and coarsely crushed into oily, dark-red flakes with a flavor that is mildly fruity, slightly smoky, and reminiscent of raisins or sun-dried tomatoes. Due to the Syrian civil war, most commercial production has shifted to southeastern Turkey and Jordan, though the variety remains closely associated with Syrian cuisine.
