The Fresno pepper was developed in 1952 by Clarence Brown Hamlin in Fresno, California, and is most commonly encountered at its mature red stage. It closely resembles the jalapeño in shape and size but develops a fruitier, slightly smokier flavor as it reddens. Fresno chiles are popular in California cuisine for fresh salsas, ceviches, and as a milder but more complex garnish than jalapeños.
