The guajillo is the dried form of the mirasol pepper and is one of the most widely used dried chiles throughout Mexico. The long, deep-red pods have a smooth, leathery skin and produce a tangy, slightly fruity flavor with notes of cranberry and green tea when rehydrated. Guajillos are fundamental to many traditional Mexican sauces, tamale fillings, and chili-based marinades for meats.
